The majority of the blades arrived in great condition. The Chef's knife, the 5" Santoku, and the paring knife all had notches in the blades and required me to sharpen with a whetstone before use. The knives feel good in my hands, and slide right straight through a full sized watermelon, hard veggies, or a steak with ease. Someone else likely would have returned the knives because of the notches, but I did not because I was able to get them out and get the blade into better condition than the manufacturer. The metal plate over the knife block should be of concern... If you are trying to put away a knife and accidentally stick it into the metal you could damage the knife. I do not feel as though these knives will last long, but for now as long as I articulate the cutting edge they should serve their purpose.

Great set of knives for the price : Chicago Cutlery Insignia2 18-Piece Knife Block Set with In-Block Knife Sharpener

Last year my wife had given me a three piece Chicago Cutlery Insignia2 set for Christmas. Once I started using those knives, the rest the knives I owned never made it out of the drawer. I used to buy the typical department store brands (which shall remain unnamed) and pretty much had to replace them yearly. Once I found Chicago Cutlery, I never looked back.

When I saw this set on sale at Amazon, I simply had to get it. I still had an older 12-piece block set and wanted to ultimately make the upgrade to a full set of Chicago Cutlery Insignia2. That was definitely the best move I could have made.

Without going into too much detail, these knives are fantastic! They are super sharp and are tremendously comfortable to use, so no hand fatigue while prepping meals. Plus, with the in-block sharpener, you never have to worry about them getting dull. The knives themselves are quality made with the full tang and triple rivets. Unlike some lower end models that simply have the plastic overcoat which cracks off after regular use, these knives will last a lifetime.

Positives: Great quality, super comfortable to use, very sharp, in-block sharpener keeps your knives like new, and I don't know how I've lived without the Santoku for so long! The way it sits in your hand is prefect for chopping veggies.

Negatives: Only one complaint, which is the utility scissors that come with the set. It's a problem that is frustrating the first time you use them but you do get used to it. The scissors come apart for easy cleaning, which, don't get me wrong, is a extraordinary idea. The problem is that they split apart after about a 35-40 degree opening. So as long as you don't open the scissors fully, you'll never have an issue.

Overall, I would propose these knives to whatever at any level of cooking experience.

Good Starter Set of Knives : Chicago Cutlery 18-Piece Insignia Steel Knife Set with Block and In-Block Sharpener

I beyond doubt like these knives. I've been making do with a totally crappy set, biding my time until I could afford a high-end set. I haven't quite arrived at that time, however, and I just couldn't take using my old set anymore (I cook a lot). I saw these in a store (for under $100, so do some comparison pricing before you click the order button), pulled up the reviews on this site, and went with the buy based on the overwhelmingly positive reviews here. I'm so glad I did. These make a world of incompatibility in my daily life. I can't say how they correlate to the beyond doubt high end knives since I've never used any, but compared to other well known brands with similar pricing to the Chicago Cutlery, these are superior. Plus, the look nice, they feel great, and they wash up well (hand wash and dry only). I haven't had them long, but I intend to take perfect care of them and keep them sharpened, and I have faith they will hold up. Overall, this is a very good buy if you're considering other brands in the same price bracket.
