I'm so glad I bought these knives. I've been wanting a nice set of knives for a while now and did quite a bit of research prior. I've been 'making do' with a cheap set of knives from Wallyworld, and I think that even the top parts of these Wusthof blades are sharper than my old knives. If you want sharp knives, let me show you all the nicks and cuts on my hands from these knives over the past few weeks. I'm not a sloppy cook; just an sufficient one, and I have to be more cautious now because these knives in effect are Sharp. They are also forged instead of stamped, which is a higher ability knife. Don't confuse these with the gourmand line which is stamped. I imaging the gourmand line is suitable for a novice cook, but the classic line is for those who want a stronger knife that will hold its edge much longer. Even the scissors slice through things like nothing I've seen before. This set has pretty much all the knives that I'd personally need... but I do wish it had any sized Santoku. One bit of negativity is that I don't care for all the extra slots in the over-sized knife block. I think it's trying to persuade the buyer to buy more knives. Overall, I'm by all means; of course pleased and propose these Wusthof knives.

wow, what can I say : Wusthof Classic Gourmet 3-Piece Knife Set
I loved these knives right out of the box. They came sharp and feel great. I was finally arresting out of the parent's house and needed some knives. With the free block and steel from Amazon you can't go wrong. I looked at all the sets for weeks and in the end decided that I would rather just buy what I needed, instead of settling for what came in the sets. I have found that I am rarely happy with prepackaged sets of anything. Therefore, this was a good starting point to which I added a bread knife and plan to add pieces if I need them (I doubt I will, but I may just fill the block :). I bought these sight unseen from Amazon and could not be happier.
Update! June 2011 and still going strong! Daily use, occasional sharpening, wow.

Great for chopping chilies : Wusthof 4183-7 Wusthof Classic 7-Inch Santoku Knife, Hollow Edge
I have been using the Wusthof Santoku Knife for any months. It has a good equilibrium and feel. You are able to slice and dice like a Pro. The blade is thin but still ridgid enough to cut and slice straight, allowing very thin slices. It cuts meat very well and is very, very sharp. The edge is ground to a very narrow angle. Looks to be about 7 to 10 degrees. The shallow edge angle is what allows it to be so sharp. Due to the very thin edge of the blade, it should not be used for chooping or heavy duty cutting. The steel used is exquisite and holds its edge forever. I touch it up ocassionaly with a ceramic sharpener. It only takes a concentrate of swipes with the cerramic. I think it is as sharp now as the day I received it. The dropped point is a great design. I use the back of the point to scrape garbage off of the cutting board.
